Blueberry Dutch Baby

With these lovely, longer days, supper plans tend to get forgotten about and more often than not, I’m scrambling to make something in a timely fashion so we’re not eating at 8pm!

That’s where Dutch Babies come in handy! Eggs, milk, flour, a cast iron pan and a hot, hot oven, you’ll have dinner in 30 minutes!

This recipe asks you to use a blender to mix the ingredients but this off-grid living gal switched things up so it’s easier and you dirty less dishes! Unless you want to use the blender that’s up to you, I’ll leave those instructions in the recipe!

I add the cup of flour first, then the milk and I hand mix till there’s no lumps. Add eggs and the rest of the ingredients afterwards.

The recipe doesn’t specify what type of butter to use, if you use salted butter, don’t add the 1/2 tsp of salt. It makes the Dutch Baby super salty! Trust me lol

If you choose to use unsalted butter, I’d add the 1/2 tsp of salt. I’m sure the recipe would be fine if you didn’t add the salt!

The 4 tbsps of butter is excessive, 2 tbsps is fine to felt in your cast iron to grease it up!

INGREDIENTS

  • 4 tablespoons butter

  • 6 eggs

  • 1 cup milk

  • 1 cup flour

  • 1/2 teaspoon salt

  • pinch of cinnamon

  • 1 teaspoon vanilla

  • 1 ½ cups fresh blueberries

  • Toppings: whipped cream, syrup, powder sugar, yogurt

  1. Combine eggs, milk, flour, salt, cinnamon, and vanilla in a blender and pulse until evenly combined and smooth. Let batter rest for 30 minutes at room temperature.

    * I hand mix, flour then milk, mix till there’s no clumps. Add eggs, then the rest of the ingredients.

  2. When ready to bake, preheat oven to 425 degrees F.

  3. On your stove top, heat your cast iron pan, add butter. Be sure to grease the sides of your cast iron so the Dutch Baby doesn’t stick.

4. Pour the batter over the melted butter and blueberries and immediately put it in the oven.

5. Bake for 22 minutes or until edges have puffed up and started to turn brown.

6. Enjoy!!

The coolest part is they never come out looking the same!

Hot tip… if you don’t cook with a cast iron pan often or it’s your first time, clean while the pan is still hot. Add a heap of olive oil and use anything metal that will scrape off the food that’s stuck on the pan! Do not use dish soap!!
